Bringing Origami to Life by John Montroll is a great book for starting out in origami. It was the first book I bought and it got me started nicely.
This book covers all the more complex folds like open sink folds, reverse folds (inside and out), crimp folds, spread squash and rabbit ear folds. While Montroll has succeeded in making models that are simple enough for a beginner, the models must be folded extremely neatly. If you are not careful, the limbs can come out stubby, and sometimes it is easy to crumple the models if the fold is not 100% correct. But if you are very careful with your folds the models will look good and be worth keeping for display.
The models start out very easy, making a duck and sparrow, but near the end they get more complex, such as making a horse with rider all from one uncut square!
Montroll has released several origami books, and overall I think this is a classic. Fairly simple models which look very nice folded with care.
